What a way to round out this year's Melbourne Food & Wine Festival with Italian extravaganza Santo Palato, a pop up of Abruzzese Chef Sarah Cicolini's trattoria in Rome, brought to life in collaboration with Tipo 00 and wine ragazzo Giorgio di Maria at private members Kelvin Club established in 1865.
A highlight was experiencing Sarah's world-renowned Mezzi Rigatoni Carbonara cooked 'al chiodo' or firmer than al dente with crispy guanciale echoing her sentiments that "for me, pasta is something like magic."
